Opening Up Some Parm

Since we’re in the process of introducing ourselves here, we thought it might help to share a couple of photos from some of our Marion Street Cheese Market adventures. We’ve set up a little flickr page, which will be updated with new pics from time to time. Here’s a quick pic of cheesemonger Aaron cracking open a wheel of two-year-aged Parmigiano Reggiano. These suckers come to us from Italy in 90-ish pound wheels and must be opened up using a set of special knives.
